Vegetarian Spring Rolls with a Peanut Dipping Sauce

Ingredients:

       For the spring rolls:

  • Rice paper wrappers (available at most grocery stores)

  • Thinly sliced vegetables such as cucumber, bell peppers, carrots, lettuce, avocado, and fresh herbs like mint, cilantro, or basil

  • Cooked vermicelli noodles (optional)

  • Extra firm tofu, sliced into thin strips (optional)

  • Shredded cabbage (optional)

    For the peanut dipping sauce:

  • 1/4 cup peanut butter

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey or maple syrup

  • 1 clove garlic, minced

  • 1 teaspoon grated ginger

  • 1-2 tablespoons water (to adjust consistency)

  • Optional: Sriracha or chili flakes for heat

Instructions:

  1. Prepare the Fillings:

    • Wash and slice your vegetables thinly, ensuring they're easy to roll.

    • If using tofu, slice it into thin strips and lightly pan-fry them until golden brown on both sides.

    • Cook vermicelli noodles according to package instructions, then rinse under cold water and drain.

  2. Prepare the Dipping Sauce:

    • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, minced garlic, and grated ginger until smooth.

    • Add water gradually to reach your desired consistency. If you like it spicy, add a dash of sriracha or chili flakes. Set aside.

  3. Assemble the Spring Rolls:

    • Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds until it softens.

    • Place the softened wrapper on a clean, damp kitchen towel.

    • Arrange your desired fillings in the center of the wrapper, leaving some space on the sides.

    • Fold the sides of the wrapper over the fillings, then fold the bottom edge over the fillings and roll tightly to enclose them.

    • Repeat with remaining wrappers and fillings.

  4. Serve:

    • Cut the spring rolls in half diagonally and serve them with the peanut dipping sauce.

    • Enjoy your fresh and delicious spring snack!
